Rock Cakes
100 g butter or margarine ( 100 ml)
240 g "Golden Harvest" cake floor ( 500 ml)
2 ml baking powder
100 g moist brown sugar ( 100ml)
75 currants ( 125 ml)
30 g chopped mixed peel ( 50 ml)
1 egg
50 ml milk
5 ml lemon essence
Rub or cut the shortening into the sifted dry ingredients. Mix in the sugar and fruit. Beat the egg and milk together, add
the essence and stir into the flour mixture. The consistency should be very stiff indeed, or the cakes will loose their
shape. Spoon the mixture in rough heaps onto a greased baking sheet and bake at 200°C ( 400°F ) for 10 min - 15 min
